While Nick and I lived in Pensacola, Florida, one of our favorite restaurants was a tapas place in the city center. It was our favorite restaurant in Pensacola, and Nick claims to be his favorite restaurant of all time. We brought someone who visited us, and sometimes we imagine some of their food.
One of them is sweet. It offers a melted chocolate cake with vanilla ice cream, toast and fresh basil. Basil? Yeah, basil. After going there for the first time, our server persuaded us to give it a try, despite our anxious appearance. He swore it was great. And the holy cigarette, gentlemen, was very good. Perfectly matched with fresh spicy basil, warm chocolate and velvety vanilla ice cream. It was really amazing.
When I recently returned to Pensacola on a girls trip, I took my friends to my favorite spot. They changed the dessert a little and now they serve basil ice cream cake. Although he was really good, he missed the fist of fresh basil leaves.
Since then, all I can think of is basil, chocolate and ice cream.
I've had a lot of fresh basil in my garden, especially since summer. I made a bunch of pesto, I fill all my omelettes and salads with basil and I still have a ton.
In the end, I did my own transformation into the amazing dessert combination. Nothing can write like fresh basil in summer. Except ice cream! Summer is all about ice cream, so it was the best time of year to combine the two.
Since I did not skillfully grow the melted chocolate cake, I decided to make a warm homemade cake instead. There's nothing better in life than hot, homemade cakes. I added some hot sugar so I won't miss the melted center. Then fill them with fried hazelnuts, Blue Bunny Vanilla Bean ice cream and fresh basil. Is there a better way with an ice cream pastry to celebrate summers?
Combine butter, sugar, vanilla and eggs in a medium-sized bowl. In another bowl, sift the flour, cocoa powder, baking powder and salt together.
Add wet ingredients to dry ingredients and mix until thoroughly mixed. Fold the piece of chocolate. Spread in a non-stick sprayed 8 inch square baking dish.
Bake for 25 to 30 minutes until the edges of the cakes begin to pull from the pan. Cool completely before cutting.
The hottest warm muffins with hot lukewarm chocolate, nuts and a large vanilla ice cream scoop to make the markets. Sprinkle with chopped basil.
After shopping in my garden for basil, I went to Walmart to get the rest of my stuff. They carry a wide variety of Blue Bunny ice cream flavors. This time I was just looking for vanilla, but I even had my own choice - Vanilla, Homemade Vanilla or Vanilla Bean! I went with Vanilla Bean so the little spots always pulls into me. But there are dozens of options!

That looks great, Jess! Such a unique turn in a classic dessert. I've never thought of pairing basil with a cake before… but I believe it's delicious to you - because it sounds great. I love basil in desserts and cocktails - a super versatile little kid, right? Can't wait to try it!
First of all, the colors of the basil on the cake are spectacular! Second, what a great idea! I never thought of putting fresh herbs in my cake, but now you've raised my curiosity, so I might have to try it!
