I usually only have breakfast on Saturday mornings, but I always enjoy a variety of breakfast items to mix. Comfort-style foods such as low-carb waffles, french toast or hot dog puffs always have a delicious keto breakfast. After making Keto Pumpkin Pancakes last fall, I decided to change my recipe and make Keto Blueberry Coconut Flour Pancakes instead. I thought it could be changed easily or twice, but replacing pumpkin puree with fresh blueberries was harder than I expected because I needed softer and thicker pancakes to keep the blueberries.
After several attempts and variations of this recipe, I finally made this delicious light and fluffy keto Blueberry Coconut Flour Pancakes perfect. Served with crispy bacon, they make a fantastic hearty breakfast. My whole family loved them, except for my four-year-old, but five out of six are not bad. Then I stayed full for hours and never once thought about lunch.

Keto Blueberry Coconut Flour Serve with Butter Pancakes and a delicious keto-friendly syrup, Lakanto Sugar-Free Maple Syrup. Lakanto Monkfruit Sugarless Maple Syrup is flavored with Monkfruit, a very popular keto-friendly sweetener. Many of the sugar-free syrups I find in my local markets are flavored with sweeteners that avoid the keto or low carb diet, as they can cause an insulin response.
Apart from all the low carb syrups I've tested, Lakanto Monkfruit Sugarless Maple Syrup has the most authentic maple syrup taste without any flavor. Do not think like regular syrup, it tastes at that point.
In a bowl, add chilled coconut oil and softened cream cheese and whisk until smooth. Then add the eggs, egg whites, Lakanto Monkfruit Powder Sweetener and vanilla. Beat high with a mixer until the batter is joined.
Add all ingredients except fresh blueberries and mix again at medium speed until they are just put together. Make sure you do not use heap measurements for coconut flour. Do not mix too much.
Lubricate with pan or sieve oil. Put 1/4 cup batter into hot griddle or pan, put 4-5 blueberries on top.
When you start to see the bubbles on the pancakes, carefully turn and cook the other side.
Note: If the dough is not thick enough for 6 tablespoons coconut flour and blueberries, you have added an additional tablespoon coconut flour. I tested it either way. Be sure to use tablespoon at coconut flour level and do not stack tablespoon because it changes the batter consistency considerably. Some coconut flour goes a long way.
Do not mix too much.
Sugar alcohols from Lakanto Monkfruit were not included in the nutritional information because most were extracted to calculate net carbohydrates.

Hey, Kasey! I've tried most of the recipes and enjoyed them all! I did these pancakes this morning and the batter was too thick. I followed the recipe exactly, but I doubled it. I'm not sure this has changed in a batter way. They were still delicious! The batter is supposed to be super thick?
I tried the recipe again in the afternoon with 6 tablespoons of coconut flour and the pancakes worked fine although not fluffy. Depending on the consistency of the dough, I made a note on the recipe card up to 6 or 7 tablespoons. You should use a level tablespoon because a stack of tablespoons, coconut flour is very absorbent and the cream cheese will completely change the batter consistency as the batter needs to be completely softened where the batter is poured smoothly. In addition, after adding coconut flour, you cannot eat enough to cause the dough to thicken.
