We love chicken fajitas. Ever since we started watching a keto lifestyle, whenever we're eating at a Mexican restaurant, I'm ordering husbands and fajitas and eating on a lettuce bed. It was so easy not to eat bread.

Recently, when planning dinner, I decided to make chicken fajitas in the oven for an easy meal. While preparing my shopping list, I thought about how much we love our local Mexican restaurant. So I decided to make a keto queso recipe to enjoy these low-carb cooked fajitas. Although there are many different ways to enjoy the homemade keto queso, we spilled it on the chicken fajitas in a bed of lettuce! It was so delicious! I felt like we were eating in our favorite Mexican restaurant.

How to Make Homemade Keto Fajita Spices?

You can use a packaged taco or fajita spice, but I love this homemade keto-friendly fajita spice. Packed spice blends contain additives that many follow while avoiding a ketone. You can also season this low-carb fajita spice with spices that you may have consumed at home in minutes.

Olive oil

Pro Tip: For a lighter flavor, mix the fajita spice with olive oil for a delicious pickled chicken fajita.

I use various peppers and different flavors to add color to this low carb cooked fajita recipe. I tend to slicing a little thinner because I prefer cooked peppers until soft.

First, add chicken, vegetables and spices to a large bowl. Combine all ingredients with a pair of tongs until they are coated with a low carb fajita spice mixture. Also mix all the spices with olive oil in a small bowl and then pour over the chicken and vegetables. I find that mixing everything in a bowl first spreads the spices evenly.

What Kind of Chicken Do I Use for Baked Chicken Fajitas?

I'd prefer the boneless skinless chicken breast, but instead I could use the thighs, I could even completely change and use the chicken instead of the skirt steak.

I was cooking Keto Baked Chicken Fajitas on a baking tray, but I found that they cook more evenly on a cookie sheet.

Tip: You can also use a cast iron skillet to prepare this low-carb cooked fajita recipe or to throw everything away from the grill in a safe grill pan in the oven. The grilled chicken has a unique flavor that makes the chicken fajitas even more delicious.

If you want to notch your Low Carb Baked Chicken Fajitas, prepare this homemade Keto Queso. Often this layer is poured with keto queso on a bed of lettuce on top of the pan fajita. Instead, you can use lettuce windings or low carbohydrate sediments. In both cases, queso adds a lot of flavor to the fajitas.

Cooking time and dinner were on the table in less than 30 minutes. We served our Keto Baked Chicken Fajitas on a bed of lettuce and garnished with fresh tomatoes and jalapenos. Then, as I said, we put the best keso-friendly queso on top. These low carb and keto phagitas also taste fantastic scraps.

I would serve them as often, but the cauliflower makes a better keto side dish if you want something a bit more.

How to Store Baked Chicken Fajitas

This recipe makes chicken fajitas cooked in generous amounts of carbohydrates. I kept it in a refrigerator in an airtight container for four days or in a freezer for up to 6 months in a freezer.

Instructions

Preheat the oven to 400 degrees.

Slices of chicken and vegetables in strips.

Combine olive oil and spices in a large bowl. Stir well.

Add the chicken and vegetables to the spice mixture and stir until covered.

Pour the fajita mixture onto an oiled pan and spread it as a single layer. Depending on the size of your leaf tray, you might need to divide it into a two-leaf tray. It'il look like a ton of vegetables, but they'il shrink as you cook.

Bake for 11 minutes and then mix and return to the oven and cook for another 11 minutes or cook until the chicken is completely cooked. Because of the size of my oven pans and oven, I placed one of the pan pans on the lower shelf and the other on the middle shelf. I changed them in half of the cooking.

Be sure to check the temperature of the chicken when all ovens are cooked differently. 165 should be read on the thickest part of the chicken.

If you want to fry your chicken fajitas, turn the oven and cook for a minute or two. When using a broiler, be sure to watch closely as it can burn very quickly.

Remove from the oven and top with lemon juice and chopped coriander.

Serve a bed of homemade Keto Queso Dip and leafy greens mixed with your favorite keto-friendly condiments, including sour cream, guacamole, sliced ??avocado, jalapenos and a few tomatoes.
