This Cucumber Salad is prepared quickly by thin slicing of cucumbers. I used a mandoline to obtain thin slices of equal size. It tastes better this way! I mixed the sauces with rice vinegar, avocado oil, sediment sweetener and salt.

I have been cooking when preparing this salad and it tasted better the next day. Sharp dressing really dips into cucumbers. Refrigerated will last well for about 3 days.
