Keto Chicken with Mushroom Sauce

One of my favorite dishes was chicken cooked in mushroom soup cream before it started to eat healthier. Even before I started on a ketogenic diet, I gave up most of the processed foods, such as cream soups. Since then, although I hate mushrooms, I miss Chicken & Mushroom Sauce. There is one thing I love about mushroom sauce, but as I mentioned earlier, I hate mushrooms. I'il pick each one. I don't know why they made me so angry, but I wouldn't even bite a fungus. In fact, my eldest daughter has to cut them for me because they disgust me. Too picky? Yeah, I'il admit I'm a completely picky eater. This may be why most of my recipes are so simple.

Anyway, I looked at the Keto Green Bean Stew Recipe to get inspired to make this recipe as I wanted a homemade mushroom sauce. I also wanted to make sure that I knew that most people wouldn't spend time in the kitchen preparing, cooking and cleaning. Keep in mind, this Keto Chicken with Mushroom Sauce is a single pan dish for easy cleaning. For a full meal, pair with your favorite vegetable or with a large leafy green salad.

Recipes for Making Keto Chicken with Mushroom Sauce

1 tablespoon butter mushrooms, garlic and onions for about 6-7 minutes or until softened saute.

Remove the vegetables from the pan.

1 tablespoon of butter fry both sides of the chicken breast.

Add the vegetables back to the pan.

Add all other ingredients, then cook at low / medium temperature for 20 minutes. Then remove the lid and add 1/2 teaspoon of Xanthan Gum to thicken the sauce and continue to boil for about 10 minutes or until the sauce is low and the chicken is made.
