I just wanted a big fluffy blueberry donut lately. I'm not sure where my longing came from when it came out of the blue. I'm not usually the one who eats cake very often even before moving on to a ketogenic lifestyle. Since I made Keto / Low Carb Pumpkin Muffins from my pumpkin bread, I thought it wouldn't be hard to change my Blueberry Bread recipe to make cakes.

I had planned Keto / Low Carb Blueberry Muffins, I made my baby fall in love with blueberries this week, so I only stayed 1/4 cup. To make up for the lack of blueberries, I added a few chopped strawberries and instead did the Mixed Berry Muffins. Although the keto friendly / low carb bread does not taste the same as fluffy white flours and normal sugars, this version is a great alternative. I think these Keto Mixed Fruit Muffins are taken out of the oven and served with a large ole oil. Tired of eggs or afternoon snack options, they prepare a great breakfast.
