Low Carb Chicken Recipe: Fried Chicken

Last night I decided to make Fried Chicken, using the same Low Carb Breading I used to make Fried Squash last week. I was in the mood for salty, crispy fried food – which can be elusive on a low carb diet. ??

I had boneless chicken strips in the refrigerator, and had been trying to think up a new low carb chicken recipe when I remembered the breading!

I also had a fresh yellow squash and frozen broccoli to work with, so I decided to throw it all together and make a meal.

All you have to do is pour a little heavy whipping cream in one bowl, and the low carb breading mix in another. Add your favorite seasoning to the breading mix. Coat your chicken with the cream, then press it into the breading to coat.

Heat oil in a large skillet to about medium (maybe a little under). Test it by putting a pinch of breading into the hot oil to make sure it sizzles. When hot, place breaded chicken into the oil and cook until brown on both sides – and cooked through.

When done, remove from skillet and place on a plate covered with a paper towel (to soak up excess oil). Super easy! With the small chicken tender strips it took less than 15 minutes total from start to done.

For the side dish, I washed and cut a fresh yellow squash, and put it in a pot with about half a bag of frozen broccoli.

Cover it with cold water, bring it to a boil, and let it boil for about 7 minutes. Next, drain the water off (I used a strainer in the sink), and put the vegetables in a small baking dish.

Add salt & butter to taste and cover with shredded cheese. Bake at 400 until bubbly!

This made for an absolutely delicious (super fast) low carb meal! ??

The low carb breading is great for other low carb chicken recipes as well, including baked breaded chicken over your favorite vegetables – drizzled with Alfredo sauce!

In order to keep more nutrients in your veggies you might want to steam them instead of boiling . Boiling leaches out many nutrients into the water. Of course you could freeze the

water and use in soups later. You can buy a little collapsible steamer to put in a pot. Put about an inch of water in pot, the veggies in the steamer and cover. Much healthier!

and thank you for all the good work you are doing and each day we are seeing Less of you.( losing weight.)yes what Barbara said it what I always do I steam my Broccoli, and cauliflower, Brussels Sprouts, and all my greens I never waste any water that I boil things eatable in always use it for gravies, and other toppings but yes I am now really watching your diets and foods, with great Interest, as I grow all my own fresh vegetables in season, with out any sprays of chemicals even on my flower garden, so yes great stuff Lynn thank you from Garry.

Lynn Terry…do you brine your chicken? Since discovering brining we brine everything…it just takes any recipe to the next level! Have to plan ahead a little best results brining overnight or two if it’s frozen. But I will just grab a big bag of chicken tenders throw them in some brine frozen and then they are ready to prepare next night or two! We discovered brining with Thanksgiving turkey and WOW! I don’t boil or steam my veggies in order to retain the nutrients. They cook to a perfect al dente in the oven. I love some crunch even to my cooked veggies. Fresh cut squash, broccoli, onion, egg, cheese, salt and pepper, bake at 350-400 until golden and bubbly. There’s enough “oil” in the cheese to make up for no butter

The breading I used here – the link doesn’t work anymore. I found an easier way to make it. Use an egg wash with a splash of heavy cream, and parmesan. Dip in egg wash, roll & coat in parmesan, cook hot & fast. Easy!

Some people like to roll it in crushed pork rinds or a combination of pork rinds and parmesan.

Roasted veggies in the oven with a splash of coconut or olive oil are outstanding–cauliflower and brussel sprouts( I quarter them) are the best–then a little sea salt. Im definitely going to order the breading:)
