We are in the funky transition of the year when the holiday recipes are driving and I enjoy the 80 degree Cali sun and drink. My brain says “vacation time ve and my body says el Let's go to the beach” Confusing, huh?
I'm holding the second, but I have a lot of autumn recipes. As I was thinking of being satisfied with the holiday this week, I started thinking about ways to “lighten klasik the classic recipes.
The first thing thrown into my head was the traditional mashed potatoes, and it was replaced with mashed cauliflower - making cauliflower mashed potatoes. So this is what I have for you today. Mashed cauliflower with garlic and herbs. And trust me, it's delicious!

Why should you make porridge cauliflower?
Cauliflower mashed potatoes are a great idea, because you're replacing a starchy vegetable (which can drop blood sugar) with a low-carb vegetable alternative.
Now, I'm not a low-carb girl for registration, and I don't think carbohydrates (especially those coming from potatoes) are bad. However, there will be many ways to increase blood sugar levels during the holidays, so it is a wise idea to change the mashed cauliflower for traditional mashed potatoes.
Mashed Cauliflower What is the taste?
Personally, I think the mashed cauliflower tastes great. Really. Especially with garlic and fresh herbs. Potatoes are not as starchy, creamy and have a similar thick texture (if you do it my way).
You can also be creative with different add-ons according to your diet preference. The basic recipe I offer today is milk-free, paleo, vegan and keto friendly, but if you tolerate the dairy product, don't hesitate to add some butter, ghee or cheese (chevre is creamy and delicious).
Mashed Cauliflower Tips
Because I've done mashed cauliflower over and over (failed a few ways), here are a few tips:
Do not boil cauliflower. I know it's easy to throw cauliflower flowers into a pot (and many recipes say that), but it adds a lot of water to the vegetable and you end up with cauliflower puree instead.
Instead of cauliflower with steam. This is the best, fastest and safest method. I would also recommend steaming for 6-8 minutes, excessive steaming. Again you want to keep your cauliflower beautiful and clear.
How about frying cauliflower? You can do that. And it gives a nice flavor, but it takes 2-3 times the time, so I don't do it often.
Definitely add garlic and herb. When I heard from people holding cauliflower puree, they were so clear. Let's be honest, cauliflower is a very soft vegetable, so it becomes soft in the end. Fresh herbs are the best (though dried), along with some butter, ghee or olive oil. If you've prepared a homemade compound butter on your freezer tray (as I showed in my Kitchen Gadgets video), you can throw a cube and look for it one day!
For the hard, chunky consistency of the cooked flowers, crush it with a potato crusher or use a hand-blended blender for creamy mashed cauliflower. You can also use a food processor, but be careful not to overdo it and fill it with a mash.
And these guys. Super easy, delicious, healthy, low carb and delicious mashed cauliflower. And also, remember that for a happy environment you can also make 50/50 with traditional potatoes and mashed cauliflower.

Be careful not to overcook the cauliflower, otherwise your cauliflower puree may cause more cauliflower puree. The same can be said if you are using a food processor instead of using a potato masher or a hand-held stick mixer. The goal is not to mash, but to mash.
Ok, this is easily the nicest cauliflower I have ever seen. Your photos are gorgeous! I drank cauliflower rice, but I didn't get the cauliflower puree and I have to try it soon! I love the addition of herbs!
