I’ve been dreaming of spring produce for so long, I can’t believe it’s finally here.
I know it’s weird but I do dream about food and new recipes. I come up with some great ideas in the middle of the night. I keep a notebook by my bed and try to always write them down.
This Roasted Broccolini is not one of those middle of the night recipes. I’ve been making this since before the kids were born. In fact, I can remember each of my little ones in their high chairs munching on this, eating it with their fingers.
There’s something fun about it looking like trees and that appeals to the little ones. I can’t use cute terms to attract my kids to eat their veggies anymore. They either like it or they don’t, and no amount of prodding will make them eat it.
There are certain flavors that appeal to them and garlic is a big one. That’s why I like the chopped garlic in the squeeze tube. I know it’s a cheat and might not be quite as flavorful as fresh, but I’m a busy mom and need all the shortcuts I can get.
I use it on all roasted vegetables which I make several times a week. It’s quite possible that in a year’s time this squeeze bottle saves me a full day’s worth of chopping garlic. Woohoo!
Roasting vegetables is the only way to go.

In fact, asparagus from a can was the worst. It doesn’t even look like the same vegetable. So in an effort to get my kids to like vegetables, I almost always roast them.
Their favorite roasted veggies are broccoli, broccolini, sweet potatoes, peppers, butternut squash, and potatoes. Simply mix with olive oil, garlic, salt, and pepper and you are good to go.

How to Roast Broccolini
It’s so easy to roast broccolini. All you have to do is put it on a sheet pan and toss it with a generous drizzle of olive oil, garlic, salt and pepper. Make sure to get into all the nooks and crannies.
Roast it for about 12-15 minutes at 425 degrees. Give it a good toss at least one time during cooking. Serve warm with a drizzle of fresh lemon juice.

Preheat oven to 425°.
Spread a sheet pan with parchment paper and lay broccolini on it.
Drizzle with olive oil and add garlic, salt and pepper and rub with your hands. Make sure you rub each piece of broccolini with oil and seasoning.
How much we love broccolini you cannot imagine ?? . For my husband and I they are a go-to easy, quick and tasty side dish, especially in the summer, when we have the fresh ones from my in-laws’ garden. Never roasted them, though. Beautiful!
