Casseroles are chocked full of meat and vegetables and it’s pretty easy to make them without added carbs. Cheese seems to be a big part of Keto casserole recipes too. So why not embrace it and enjoy it.

My mother made casseroles all the time and I love making casseroles. I love how easy they are to make. What I like the most is that it’s easy to put all the ingredients in a bowl and mix them together. Then all you have to do is dump them into a casserole dish of some sort.

Then I like how I can put it in the oven and let it bake while I’m doing something else. I’ve even been known to take a break from working on my blog, whip up a casserole, throw it in the oven and then work some more while it’s baking.

I also love how they can be frozen sometimes and then I have a meal already made to throw in the oven and eat another day. It works especially good when I’m having a really busy day and don’t have time to cook. It’s easiest to take it out of the freezer the night before or early in the morning and put it in the refrigerator. Then you won’t have to bake it longer in the oven if it isn’t frozen.

Keto Casserole Recipes

This is one of the easiest recipes in the world to make for dinner. The best part is it’s gluten-free too. Sometimes I make extra and use the leftovers the next night to make things like burritos, tacos, taco salad. Sometimes I just eat it for lunch the next day too. It’s yummy easy.

I’m sure you’ve all heard about all the wonderful casserole recipes there are around for breakfast now. Well, this one is no exception except that it’s Keto. That makes it really special at least for Keto eaters. Of course, you could eat this any time of the day. It isn’t just for breakfast alone. Although it is consistent with what most people eat for breakfast. My philosophy is that it’s a free country here in America and we can eat whatever we want whenever we want. So eat this whenever you want to.

This would make a really good dinner for the whole family. It’s like a Keto version of lasagne with ground beef and marinara sauce covered in mozzarella cheese. The kale just makes it really healthy and since it’s cooked it’s a lot to chew than raw and that makes it delicious. It comes together in a few minutes too. You just make have to wait for it to bake though. Oh darn, I can take a nap or get something else accomplished while it bakes.

This casserole isn’t necessarily a traditional casserole but it sort of is too for lack of a better word. I think if you left it in the pan it is baked in I would definitely call it a casserole. It’s silky and creamy because of the Parmesan and Ricotta cheeses. It’s full of flavor from the garlic, onions, fresh thyme and mushrooms. I think it would be good with some chicken added or on the side. It has a tender yet firm texture like great risotto rice is supposed to have.

Here is another class dish. This is very close to a meal my mother used to make all the time. She called it chicken divan. It’s basically chicken and broccoli with a creamy cheesy sauce on top. She served it over rice but since we can’t do that on a Keto diet, we just aren’t going to do that.

This has a little Mexican twist on it with the chili powder and olives. It reminds me of the encharitos my mother made while I was growing up. Of course, there are no tortillas or beans here. I love melted cheese and with all the cheese in this, my mouth is drooling looking at this.

This is kind of like a chicken alfredo sauce minus the pasta. This is pictured being served over zoodles. If you don’t know what zoodles are, they are zucchini cut up in a spiralizer and they look like spaghetti noodles. I think they should be called zughetti! What do you think? No matter what you call them they are quite good. You can either cook them a little bit or serve the casserole when they are raw. I like them raw. The casserole heats them up just enough to make them soft and get still a little crispy and fresh tasting.

Here is an interesting spaghetti dish where butternut squash is used instead of pasta. Don’t you just love all the cheese you can eat with these meals? It seems to be a common ingredient in a lot of Keto recipes. I think that’s because it adds a lot of flavors and is easy to find. After all, when there are so many things you can’t eat we tend to load up on the few things we can eat. It’s human nature or maybe just desperation.

Oh, delicious shrimp! It seems I crave shrimp. It’s hard to find good shrimp here in the landlocked mid-west but I don’t care. I eat it anyway. This look just yummy to me! Out of all the alternatives suggested using to thicken this casserole, choose almond flour. It’s the only one suggested that is truly Keto.

Wow, i have been on a low carb diet for a few months and am missing casseroles big time! I see several here that i know I will make within the week. We are eating lots of chicken and turkey and have to admit it gets a bit iboring but it is also helping my hubbies gout.
