Chicken marsala is a classic Italian restaurant dish. Beat some chicken, take the flour, fry with some mushrooms and mix with marsala wine. Not bad. It's not great. And more work than it's worth. Why not with scaloppine? Going in a more rustic and satisfying direction? Did you bring it to Cacciatora? I bet it's where the chicken marsal comes from. The Italian house is cooking five hundred years ago. I say we go back.

This is a family style meal but all the elements are the same. Get the chicken into flour. Saute the chicken for red. Use the processed chicken oil to fry the mushrooms. To finish cooking, fry the chicken. Deglaze with Marsala wine. A little stock and add a little balsamic vinegar. Serve the chicken on the mushrooms. I don't think you need to serve both sides. Maybe a little polenta, but not more. Plain, rustic, delicious.

This version of Marsala seems to be more intimate and less confused than you would get in a restaurant these days. I love how crispy the chicken skin looks. And the minimum content, so definitely a winner in my book!
