I have a love-hate relationship with pancakes. In most of my life the pancakes made me sick. Refined flour, sugar and syrup hurt my head and stomach, so I learned to stay away from them.

Until recently I didn't dare to make a Paleo breakfast creme and you know what I discovered? Paleo pancakes are very tasty and don't leave the mess in my belly. Packed with protein and healthy fats, you can get a great nutrition punch with a heap of healthy Paleo pancakes - and this Pumpkin Coconut Crepe will give you exactly that!

Eggs, coconut milk, pumpkin, coconut flour and cinnamon in a few simple (and healthy) content with less than 10 minutes to prepare, they are exactly what you need to start the day!

To make pancakes, combine the wet ingredients in a bowl and sift the dry materials in a separate container. Then dry the batter into wet batter and cook. They are more difficult to convert because they are made with coconut flour. Bake for 5 minutes or more until the caustic. It requires patience, but you can prepare them for easy turning and enjoy very thick and delicious crepes!

Gently fold the flour mixture into the wet mixture to combine. Do not mix too much.

Place the batter ¼ cup on preheated grill pan to create pancakes. Cook for 5 minutes or until the pancakes start to blister. Then turn and cook for 3 minutes on the other side until gently browned.

Transfer the pancakes to the cooling rack and repeat the process for the remaining dough.

Store the pancakes in the refrigerator for up to a week or in the refrigerator for up to one month.
