Comb on Crushed Peas. Healthy, fast, stylish and shy, this is one of my favorite five meals I now share on hedgecombers.com. A seafood that likes dreams.

Oh, man, can you believe there's no one to cook these combs on shredded chopped peas? Jonny won't touch a barge on the seafood, so Billy-no-mates had to order 3 lonely scallops to my fishmonger.

I kept a simple meal that didn't want to accumulate carbohydrate, which was really fast. In fact, from beginning to end, the entire recipe lasted less than 10 minutes, until the first bite went into the mouth. If I had to go out for a takeaway, it could take at least three times longer and probably three times more expensive!

If you've never done combs before, in my opinion, the most important thing is to keep your pans and fat warm. This is easier if you have a heavy (ideally cast iron) pan.

Wash your combs in cold water and dry them on kitchen paper before laying them carefully on hot oil. Even if you've dried them, I'm telling you carefully that these babies will spit. Don't mess with them once in the pan for 2 minutes. Use a kitchen timer if that worries you. Then turn over to cook for 2 minutes on the other side.

When you return, you must find a sweet and delicious golden crust on the baked side and this crust is full of flavor.

It should also be noted that very fresh sea scallops can be safely eaten as sashimi. And they serve this way in a completely divine taste. If you have an excellent fish dealer, I would always target them as very few undercook. Now, as soon as the heat comes out of the pan, it will continue to throw into the meat, and it would be really clumsy to cook it too much.

What a wonderful drilling recipe for someone, I love it! I agree with fresh combs eaten from the raw comb. I was visiting our local shellfish processing facility, once they lowered their combs and I was invited to eat one!
