The summer also brought a calm sincerity that settled around me like a slight breeze. Nowadays they feel lighter and less under load. Last week, Feynman and I went for an evening walk. It's a habit and we take our time in hot weather these days. The fireflies wandered around the neighborhood while wandering around and around the grass and trees. I thought about the day when he left them last July when they watched them shake. It's been almost a year and I've noticed last year's deep loss into something new. I have a way ahead and could see clearly for the first time.

Mango Avocado Salsa

One day after walking with Feynman and fireflies, I got some mango. The tropical odors were cut off from the paper bag and showed a slight jamming maturity. I tried to chop them up as a snack, but I stood against the urge and instead I mixed it with some chopped jalapeno, red onion and creamy soft avocado. I added fresh lemon and coriander and put it in the fridge to cool them all up with considerable amount of willpower. All the flavors were mixed for several hours and my patience was rewarded.

I then sat on a grilled chicken plate flavored with a simple pickle of pickled peppers (remember the Huevos rancheros? Each bite was a bit spicy, sweet, spicy, smoky and sour on the salsa top so it was sour.

The idea of ??a fresh, light dinner perfect for a hot summer night. Prepare chicken and salsa ahead of time (up to eight hours for both) and everything comes together in less than 15 minutes when the grill time comes.



Chipotle for Chicken

1 piece of pepper, finely chopped

2 tablespoons adobo sauce

1 clove garlic, shredded

1 tablespoon olive oil

1/2 teaspoon pepper

1 teaspoon of salt

1 teaspoon of dried thyme

4 boneless skinless chest (see note)

Mango for Avocado Salsa

1 mango, chopped

1 jalapeno, chopped

1/4 cup chopped red onion

1 tablespoon chopped fresh coriander

1 lemon juice

1 small avocado, chopped

1 teaspoon of salt


Marinated Chicken: Put pickle ingredients prepared for sawdust in a large resealable bag. Put the chicken in the bag, close it and put some mushrooms around your hands to cover the chicken in pickles. Place in the refrigerator for up to 8 hours.

Make Salsa: Mix all the ingredients for the salsa in the medium bowl. Place it in the refrigerator and place it in the refrigerator until ready for service.

Grilled Chicken: Heat the grill over medium heat. Grate the chicken for five minutes on each side and turn it once. The chicken should reach an internal temperature of 165 degrees. Allow the chicken to rest for a few minutes before serving. Put some salsa on the chicken to serve.
