Gluten-free banana bread is always a classic recipe in our home. When we started to live gluten-free, I found out that my daughter is constantly the number 1 choice in gluten-free ovens. Naturally, I decided to develop a recipe we could make at home and became a family favorite!

I love the taste and how simple it is. Plus, it freezes really well, so I'm trying to do it in big groups as best I can. In this way, we got a little warm from the oven and we could save the rest for busy mornings and lunch box treats.

Our recipe for gluten-free banana bread contains only 6 ingredients and many banana bread recipes have half of the sugar but are completely sweet. When we do, we use very mature bananas, at least all of them have a lot of brown spots. And they're perfectly perfect. I love using Earth Balance olive oil for vegan butter, as I noticed that it doesn't taste or change the taste of bakery products, unlike the other vegan butter. You can also use coconut oil instead, but this will make it a little more sweet and a little more dense.

Freezing Tips

As I said above, this recipe really freezes really well. If I freeze a whole nut, I'm gonna make it cool first. Then, I firmly wrapped it in the plastic package and then bagged it twice in the freezer bags to prevent the freezer from burning. If I'm freezing and want to be able to solve individual slices for the lunch box, I'll first slice a mini or full size nut, put a piece of parchment paper between the slices, wrap it in the plastic wrap (optional) and then place it in the double freezer bag.

Electric Mixer vs Hand Mixing

I usually do this by hand, but I wonder if I'm using the electric hand mixer to taste the same thing. The result was very tasty but quite different. The banana is further crushed by an electric mixer, so you lose bold banana flavors and also get a cake-like texture. Therefore, I recommend manual mixing for classic banana bread, but if you want to enjoy making banana cakes or donate, I recommend using an electric mixer.
