Huevos Rancheros with Sweet Potatoes
With Cinco De Mayo around the corner, I think everything is Mexican. Whether you want to dine with a group of friends, or just to feel yourself festive for breakfast, lunch or dinner, this Huevos Rancheros with Sweet Potato is absolutely stunning! They are simply quite simple to make with tortillas, sweet potatoes and eggs (you can also add black beans on the floor) and then go nuts with the sauce as you like! I love making a Mexican DIY taco bar when I serve these to a group of friends, because it makes them more fun to bring them together and personalize them. This unique spicy sweet potato with cumin pepper, Huevos Rancheros, gives a sweet and delicious kick. It'il break our socks!

In a medium-sized pan, heat the olive oil and add the sweet potatoes to the pan. Spice and mix sweet potatoes with cumin, red pepper, coriander, garlic powder, salt and pepper.
Cook the sweet potatoes a little brown and cook for 5-7 minutes until partially cooked. Add about 1/4 cup of water to the pan, boil, then cover and lower to low heat. Cook sweet potatoes for about 10 minutes until soft.
In a small bowl, fry the sides with salt and pepper on the sunny side.
Add the bread to a baking dish and place in the pre-heated oven for approximately 5 minutes to make it crispy.
To bring them together, add sweet potatoes on top of the tortilla, chopped napa cabbage on top, and then fried eggs. then with avocado, tomato, Mexican cotija cheese, coriander and crushed red pepper.
