I made the roasted Maple Dijon Brussels Sprouts and Butternut Squash with Cranberries and served it on a barley bed with some shallots and it was wonderful. This recipe will remain in heavy rotation. Tasty, nutritious and filling. A perfect meal for a few vegetarians during the cold Colorado nights. Also keeps good. This was the first of the recipes I discovered, and I can't wait to get rid of their meatless creations.
