The stir-fried scallops are the favorite way to eat scallops with lemon oil. It is cooked in a cast iron pan in full grill or on a stove. If you don't have a cast iron pan, I suggest you take one. Cast iron is cheap and can be used in grill, stove or oven. Here's what I'm using.

The secret to getting a golden brown yellowed edge, cook the combs in olive oil for 1 to 2 minutes on high heat. If you cook the combs directly with lemon butter sauce, it does not heat up to cut the edge.

When the combs are golden brown, remove them from the pan and set aside. Add lemon butter ingredients to the pan and stir until completely dissolved. Add the combs one more minute on each side and apply a piece of lemon oil.

You don't need to use too much butter to get too much flavor, so it's a delicious high protein and a relatively light meal or appetizing. It consists of lemon butter sauce, fresh chopped parsley, garlic, butter and lemon juice. You can add garlic to taste or leave them all together. I usually use parsley, but sometimes I use some basil.

Pat dries, dries and sprinkle with salt and pepper. Parsley and garlic on the shore and set aside. Add the olive oil to a 12-inch cast iron pan and bring to high temperature.

When the pan is hot, add the combs to the pan and wrap until 2 minutes per side or top and bottom to golden brown.

Remove the combs from the pan and set aside. Add butter, garlic, lemon and fresh parsley into the pan by occasionally stirring until completely dissolved.

Put the combs back in the pan and cook for a minute on each side. Place in a serving dish and wipe it up with as much lemon oil sauce as you want. Sprinkle fresh herb now in a pinch and serve immediately.
