Loaded Sweet French Fries
This is French fries! When BL asks me to make snacks on Sunday, I don't feel like a perfect compromise, just eating chips and dipping into dinner.
This stuffed sweet potato fries were almost the same thing, inspired by my Mediterranean stuffed potatoes. Too much grass, chickpeas and sweet potatoes with a dreamy tahini sauce.
Although I still love the idea of ??frying and stuffing sweet potatoes, there is something much more fun about making sweet potato fries instead. So that's exactly what we're going to do.
They're mixed French fries. Gorgeous, scattered French fries! I call them chips, but you'll eat them with a fork. To serve a crowd or just BL and I, I put them on a tray similar to the following.

The secret of this crispy French fries is to cut them as equally as possible. In this way they are all cooked equally. There may be a few small men burning at the end, but the majority should be crispy. Keep an eye on them, pulling on them when they have a nice shell. I know most people fry potatoes when the potatoes are cooked and tender, but you want to cook them longer.
The other trick is to put sweet potatoes in a single layer - using 2-3 baking trays if necessary. If one is stacked on top of one another, it evaporates - not crispy. I like to put some starch on the potatoes before cooking, because it's nice and crispy. I'm looking for corn starch here, but the arrowroot starch will work.
Prepare lemon tahini sauce. Add tahini, water, lemon juice, garlic, cumin, red pepper and salt to a blender or food processor and mix until creamy and smooth. The mixture should be in the consistency of the barn water; If it is too thick, add a little more water. Although you don't have to use a blender or food processor, it will be much easier to blend everything together. Spice to taste salt / spices and set aside.
Preheat oven to 425 degrees Fahrenheit. Peel the sweet potatoes and cut into flat, fried pieces. Ideally, you want to have the same size of potatoes as possible to cook.
Place the potatoes in a large bowl (or in a large plastic bag for easy agitation) and sprinkle the cornstarch to coat evenly. Add the olive oil and spices, then mix or shake to cover evenly.
Place the French fries on a non-stick baking sheet in a single layer (they must be in a single layer, so they do not crunch and steamed). Depending on the size of your oven tray, you may need two sheets.
Cook for 15 minutes, then bake for another 10-15 minutes and bake in the oven until it becomes crisp and cooked.
Remove from the oven and hover with tahini sauce. Sprinkle with white cheese, chickpeas and parsley, then serve.
They are messy and delicious! Serve on a plate with cutlery for easy cooking.
