Cinnamon Grapes Chopped Sweet Potatoes

Whenever I have a big night out, if my husband asks where I want to go, I usually choose Ruth ,s Chris Steakhouse. They're making an average sweet potato stew. One day we searched the online recipe and have a butter bar in a single serving! Yikes! Don't worry, it's delicious!
So this is not the recipe. This diced sweet potato with cinnamon raisins is lightly sweet, thanks to the natural sweetness of sweet potatoes and the full golden raisins. Walnuts also add some crispness.
It's very simple, very easy to do and doesn't let you feel like you're feeling angry.
First cut the sweet potatoes into very small pieces. The smaller they are cooked the faster. Try to keep them all the same size, so you don't end up with unfinished potato pieces.
Saute your potatoes with coconut oil. I don't use too much coconut oil because I tend to prefer olive oil and ghee in my food, but I think this recipe is a perfect match for sweet potatoes.
Your sweet potatoes are a little brown on the outside (you should love anything that has been carameled, do you?) Take the raisins, chopped walnuts, cinnamon and some ghee (open butter). Cover and cook for a few more minutes. That's it! You're done!
This garnish is fast, so your weekly dinner will definitely fit in your rotation. Still special enough to serve on holidays!
