When the canned salmon, eggs, and corn meal came out, that meant one thing…

Mom or Memaw were cooking salmon patties! (Actually, in the South, we call them salmon croquettes.) ??

Growing up in a home with limited income, fresh filets of salmon were a delicacy we only enjoyed at Christmas. But, thankfully, canned salmon was (and is!) much more affordable.

When I have a couple of cans of salmon in the pantry, I know that I can forget to plan dinner and we’ll still be ok. Canned salmon still contains all the fatty acids and vitamins of fresh, wild-caught salmon, plus it contains the skin and soft, tiny bones. Extra fat-soluble vitamins and calcium!

In this recipe, however, the addition of some shredded zucchini, egg-free mayo, and superfood chia seeds hold everything together. I love that I’m sneaking in a few more veggies, and absolutely no one complains!

A note about egg-free mayo: I took a shortcut and used Sir Kensington’s Fabanaise, which is made with aquafaba. Unfortunately, they use sunflower oil in their product, so it isn’t technically Paleo, Whole30, or GAPS-friendly. But hey, I won’t judge you if you won’t judge me, mmmmkay?
