Summer is gorgeous. amazing. everything. I live for this. Actually, in fact, I feel like I'm going through this summer. Great beach days, pool days or great adventures. We're all about baby sleeps right now, and our little man likes candy in one place - the cradle. Period. End of story.

Staying in the house more often than ever was grateful for my little garden. Some of the gifts of the summer garden are plentiful and lucky for us - it was one of them.

I've been preparing a party of Paleo Pesto once a week for a while, because we all know that Pesto is amazing in almost everything. The fact that it has been made in the refrigerator in advance brings these dishes together in minutes.

This assumes you've already prepared your cauliflower rice. Or, you're one of the lucky few living near a Trader Joe and stocking their freezers with fresh frozen Organic cauliflower rice.

Oh, and buy the already frozen peeled shrimp (make sure they are sustainable!), Then this meal is really a 10 minute dinner.

Wow! Fantastic! After the shrimp, I cleaned the pan with a little white wine, and because it looked so dry on the stomach, I added some organic chicken broth and two fingers passed the Gift of God to the palette (garlic) and finally through a press. He doubled his bill (Costco's Ligurian pesto’su, imported, all natural and out of this world) DELICIOUS!
