Here is a quick and healthy dish of a pan dish - Roasted Cauliflower Rice Bowl with Miso and Vegetables. Instead of frying cauliflower "rice" in the pan, make your choice of veggies and protein-like tofu or chicken or each. Paleo, gluten-free and vegan can be adapted, it is full of healthy nutritious vegetables that you can change depending on your meal preferences. Give a whirl during the busy work week.

Roasting the cauliflower rice gives you a wonderful texture and it was actually one of the ones that gave me this great idea. I love it, thank you !!!

On a parchment-covered layer, along with cauliflower rice, squash, mushrooms, onions and tofu (or chicken) are drizzled with a simple miso sesame pickle. Then it is cooked!


Preheating furnace up to 425F

Marinated in a small bowl until the hot water smooth with miso, sesame oil, vinegar, salt, sesame seeds, add the rest.

Place the unblended cauliflower higher than ½ inch on top of an extra-large, parchment-coated sheet pan (or two small pans), then place the vegetables in sections with tofu (and or chicken). Sprinkle the tofuyu (or chicken) a little, then sprinkle with pickle, coat it well, then spoon the remaining pickles on the vegetables (instead of cauliflower). Sprinkle the cauliflower with a little olive oil and sprinkle with salt and pepper (or put it in finely chopped garlic cloves).

Place in the oven for 20 minutes, quickly expel vegetables and cauliflower, then cook for 10 minutes or cook until desired.
