Roasted Sweet Potatoes with Parsley and Garlic

This sensational roasted sweet potato that is perfect to entertain and feed a crowd is topped with walnut crumbs, parsley, garlic and hot pepper touch.

It's one of the dishes that satisfies more than one sensation: it's so nice to look at, it smells great, and its delicacies put mini fireworks in your mouth. The sweetness of the potatoes is beautifully combined with the fresh and delicious breadcrumbs that make a small shot at them.

I love this meal as part of the Christmas or Thanksgiving menu or amusing my friends or family with the weekend. It can be served as a garnish with almost everything, but it can also stand as a vegetarian friendly host served with a pleasant green salad. And, the leftovers are very good with fried eggs on top!

You can cut sweet potatoes as you like. I wanted big wedges for this recipe, so I cut them in half and a quarter, but cut them into cubes and fry them for 20-25 minutes.

Although sweet potato is the main ingredient of this recipe, it is made of parsley, walnut, garlic, warm and lemon rind. You may think that raw garlic and hot pepper flavors can be a bit strong, but they are soft when you take a bite of sweet potato. You can use a food processor or practical knife skills to fill materials into one piece.

You can also add a little olive oil and lemon juice to turn the crumbs further into the pesto consistency, then peel it over the sweet potatoes.

Preheat oven to 200 C / 395 F.

Align a flat baking tray with parchment paper. Place sweet potato slices on the tray, place them with the inner side facing up and dry them with olive oil. Sprink an equal amount of 1 teaspoon of salt. Bake in the middle shelf for 30 minutes. On a 15-minute mark, rotate the tray to cook.

This is a big change from the holiday table to Irena! I'm totally eating this breakfast too - ha! My youngest is not a fan of white potatoes, but instead of mashed potatoes on Thanksgiving, I always do something with sweet potato - I'll do it!
