One of my cheating dishes is usually pancakes or waffles, but I did breakfast last morning and happily ordered some gluten-free waffles from the menu. They were made with sweet potatoes that completely ruined me. Don't flour in any way! As I expected, they never tasted! Of course I wanted to do a little bit for myself. I don't have a waffle maker (yet) so I thought, why don't you try them pancakes!

I searched for a recipe and found one from Happy Healthy Mama. The only thing you need is three content - you only get a sweet potato, eggs and spices of your choice. I thought cinnamon would be the best. Don't need flour because sweet potato works as an alternative to itself. It wasn't easier (or healthier) than that!

You should cook a sweet potato first. Bake for about 45 minutes at 400 ° C. Remove and discard the skin when ready. Crush the sweet potatoes and mix with an egg and some cinnamon.

Heat the butter in a pan and drip some batter. Cook over medium heat for several minutes and then turn to the other side. That's it - eat now! These sweet potato pancakes have a soft melt structure in your mouth and the flavor is just perfect.
