Fresh snow peas
I like snow peas, nothing feels more like the spring and summer than the hanging british, snow pea. This recipe is perfect when you buy fresh snow peas from your CSA or your local farmers market. It really allows them to be a star or at least a supporting player.
Chilean Chicken with Snow Pea Salad
I found this recipe in the old issue of Donna Hay Magazine, No. 49, which was February / March 2010 issue. This recipe came from an article about making chili sauce, but I didn't have time for this, so I used my favorite chile sauce, Mae Ploy Sweet Pepper Sauce - I found it hard to find around, so I ordered it. Amazon.
Another change in the recipe was to call for snow peas to be bleached, because the mine was very fresh and thinly sliced, I did not see a reason to boil them. Excellent cereals! The other hardest component was the bean shoot. I had them in my store, but I wrote a mental note to make a post about the germination bean (which is not good for me now - it should be written down - and hopefully in four or five places).
You know these recipes that give a lot of value for your money, it's one of them. The work was minimal and the flavor was amazing.
Preheat the oven 425. Place the chicken in a baking tray. Combine 1/2 sherbet sauce and vegetable oil and pour over the chicken. Fry for 20-25 minutes or until cooked. Remove from the oven and set aside.
Place snow peas, green onions, bean sprouts, mint leaves and coriander leaves in a bowl. Pour the Chilean sauce over the rest and throw it to unite.
Divide the salad mix between four plates. Slice the chicken and serve with salad.
