Thai Watermelon Salad

My son started eighth this week. He had a day school and now he and his class went on a 10-day camping trip. It's amazing how quiet a house would be when he emptied a child's child. It makes me realize how much of my life is turning around my son. Preparing and going to school, giving private lessons, practicing to practice is not a full-time task in itself, it is practically in itself, not to mention the constant care and nutrition of a growing young child. Since I'm spending a week on my own, I have a haircut, a massage, and more importantly, I will try my hand in some home improvement projects. Let me begin by noting that I am not working and avoiding the work around the house. I tend to be my great ambitions, but very few things follow, so I hope to keep it together and do it. There's a certain pride in doing something for yourself. As long as I don't come to the emergency room, I'm gonna call it success.

Together with the school lunch to be prepared, I focus more on what I want to eat and one of my favorite dishes during the summer months is watermelon. I still crave more after eating four pounds of watermelon in about three days, so I wanted to see if I could make more food than that. I looked at my favorite Thai delicacies, wanted a nice, salty, spicy and sweet balance and I was very pleased with the result. The addition of the spicy chilli sauce added a really nice sensation of heat, while the lemon and orange added a nice acid touch. If you don't like spicy food, you can easily remove the bitter sauce and it will still be delicious. I found the excellent light lunch but it makes a nice addition to the slightly cooked shrimp if you are looking for something more important.

Fresh, bright and full of flavor, this salad is the perfect way to highlight fresh melons.

materials

2 tablespoons of fresh lemon juice

2 tablespoons fresh orange juice

1 tablespoon rice vinegar

1 tablespoon Asian fish sauce

Po teaspoon chili garlic sauce or Sriracha

½ teaspoon fresh grated ginger

pepper and salt for tasting

4 cups of watermelon (crustaceans and seeds removed and cut to 1 inch pieces)

1 cucumber (peeled and cut into ¼ inch slices)

½ cup lightly packed mint leaves, coarse chopped

½ cup lightly packed basil leaf, torn

¼ cup of roasted peanuts, chopped

Instructions

In a large bowl lemon juice, orange juice, fish sauce, hot sauce and ginger whisk. Sprinkle with salt and pepper. Add the sliced ??watermelon, cucumbers. Fold the mint and basil, sprinkle with salted pepper, sprinkle with salt and pepper.
