Tuna and bean salad (Insalata di tonno e fagioli)

This easy tuna and bean salad from Tuscany is a healthy and delicious light meal.

This salad is a typical dish from Tuscany. This kitchen, which draws attention with its simplicity and use of fresh seasonal ingredients, is healthy and rich in flavor. Beans are a popular component in the region and are consumed throughout the year, such as Pasta e fagioli, Ribollita and Fagioli all'ucelletto.

I used cannellini beans (instead of dry variety) and tuna for this salad, they work perfectly here. It is incredibly easy to put it together and be quite useful.

It is usually served as an appetizer, and this salad can also be enjoyed as a light meal when temperatures begin to rise. The delicate taste of tuna, lemon juice, parsley and onions is very refreshing.

Tip: If you find the freshly cut raw onions a little strong, leave them in a bowl with vinegar and cold water for about 10 minutes before draining and adding to the salad.

Instructions

Separate the tuna into large pieces in a large bowl. Add the beans. In a separate medium-sized pot, mix the sauce with olive oil, lemon juice, parsley, salt and pepper. Mix well and pour over the tuna and beans. Add onion and mix. Cover and refrigerate for 15 minutes or until you are ready to serve.

6 months ago I was in Italy and I fell in love with the country as well as the kitchen. We didn't have time to visit Tuscany, which is okay with me, because this means that another trip to Italy is a must. Such a nice and healthy meal.

Tuscany is a place in my list of "I want to visit". My optician from Italy ... and we always talk about it. I love this salad sound. A great combination of beans and tuna …… this is perfect for the coming grill season.

I'm not a crazy fan of these soups, but I love them this way !! There are plenty of fresh extras that make the bean stand out! This is a fantastic bean salad that can break any skeptic beans! Exceptional!
